Tourrée de l'Aubier is a soft, extremely creamy cheese with a woody taste stemming from the combination of spruce sapwood, milk and cream in strict compliance with traditions and know-how. |

What is sapwood ?
It is the youngest part of a tree trunk, between the bark and the heartwood. It is made up of the last layers of living wood. Tourrée de l'Aubier uses spruce sapwood, a tree in the same family as fir, renowned for its aromatic properties. |

How is it harvested ?
The strip of spruce sapwood around the Tourrée de l'Aubier comes from the forests of Eastern France. It is harvested by hand by craftsmen called "sangliers". Once the spruce tree has been cut down, the "sanglier" removes the dry bark then cuts out the softest part of the tree, the sapwood, in the form of strips. After 2 to 3 months of natural drying, the strips of spruce sapwood are ready. They are then hand-sewn around the fresh Tourrée de l'Aubier. |
